An attempt on the Red Velvet

Today I have made a daring attempt to bake a cake.  For many who knows me, I tried baking before but never have any success, this was maybe 10 years ago. 

To ensure this process a successful one, I made sure that I have all necessary ingredients for this.  I even walked under the scourging hot sun to get a small packet of buttermilk for this.  I am thankful that the kitchen is equiped with the right tools.  I started my baking frenzy at about 5pm, it wasn't until 600pm that I realize I don't have enough food coloring.  How this annoyed me!  I should have double checked the recipe before I left for the store.  I called my husband and hoping he could get the food coloring before I continue but he won't be home anytime soon.  "It's ok if the cake is orange," he said, "Food coloring doesn't affect the taste." Well of course I knew it won't affect the taste, but I am baking red velvet for crying out loud, not orange velvet.  This is getting frustrating, no wonder I stopped baking 10 years back. 

Despite the hiccup, I squeezed as much red coloring from the little Mccormick food coloring bottle and just hope for the best.  At the end, the cake turn up alright, the cream cheese taste awesome and my husband said, "Really good!" and that weight a lot in my book. Sharing my Southern Red Velvet Cake
2 1/2 Cups of all purpose flour
1 1/2 Cups of sugar
1tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk
2 eggs
2tbsp red food coloring
1 tsp white vinegar
1tsp vanilla extract

Mixed flour, sugar, baking soda, salt and cocoa powder in a bowl. In another bowl whisj oilm buttermilk, eggs, food coloring, vinegar and vanilla extract.
Use a mixer and mix both the dry and wet ingredient together until smooth batter is formed. Pour the batter onto oil/flour pan. Bake it at 350 F for about 30 minutes. Use a toothpick and insert it in the center of the cake, when it came out smooth, the cake is then ready.

Cream Cheese Frosting
1 lb cream cheese
4 cups icing sugar
2 stick (1 cup)  butter
1 tsp vanilla extract

Frost the cake with the cream cheese frosting as desire.
