Easy Carrot Cake?

Fuh(sigh)..when I read the recipe I thought this is going to be an easy feat.  How very misleading, it took half a day for me to get my baking done. No wonder carrot cake cost a bomb!

The ingredients are pretty basic and easy to get at the stores, but the preparation could take longer than what we anticipated. If you decided to bake a carrot cake, do take a day off and start early in the morning. That's my advise.


Recipe:
2 cups of all purpose flour
2 cups of sugar
2 tsp cinnamon
1 tsp salt
1tsp baking soda
3 cups grated carrot
1 1/2 vegetable oil
4 eggs
1 1/2 cups pecan crushed (optional)

Method: 
 1. In a large bowl, combine flour, cinnamon, baking soda, salt, sugar.  Then mixed the eggs to the dry ingredients, once the mixed blend into consistency, add olive oil and grated carrot.
 2. Chopped pecans and add them into the mixer.
 3. Mixed the entire ingredients well.
 4. I use square pan, but you can use 9'" round cake pan.  
 5. Baked cake for 40 minutes at 350F

6. Make a cream cheese frosting in the earlier recipe (Red velvet cake).

Spread the cream cheese frosting over the cake. Now you are ready for carrot cake dessert. Your husband definitely going to love it!

Those who are health conscious.  The cake itself has lesser calories as I use Vegetable oil instead of normal butter, but you may have to keep the frosting a little thinner as the cheese may burst your diet!  Caloriecountabout.com is where you can actually figure out the exact number of calorie for food item.
